How to make this Strawberry Tart?

The Strawberry Tart Recipe is based on 3 steps: a blind bake sweet pastry crust, a vanilla pastry cream and strawberries to decorate.

Pie crust: The best option is to prepare the sweet pastry the day before, as it’s better to let it rest in the fridge overnight and blind bake in the morning. The vanilla pastry cream can be made the day before or in the morning if you plan to serve the strawberry tart in the afternoon or the evening. However, it needs to chill in the fridge for at least 2 hours. Assembly: Do it only when the tart shell and vanilla pastry cream are completely cooled. Then you can assemble and decorate with fresh strawberries.

Unfortunately, you cannot freeze this recipe. The pastry cream will split, and the strawberries will lose their texture when defrosted.

Strawberry Tart Recipe

This Strawberry Tart Recipe is a fantastic summer dessert that will bring you directly to the streets of Paris.

Ingredients

Sweet Pastry

  • 115 g (1 stick or 1/2 cup) unsalted butter, softened
  • 75 g (3/4 cup) powdered sugar
  • 25 g (1/4 cup) ground almond, sieved
  • 1 pinch salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 250 g (2 cups) all-purpose flour
  • 1 egg wash (=1 egg yolk + 1 tbsp heavy cream)

Vanilla Pastry Cream

  • 30 cl (1 cup+ 1/4 cup) milk
  • 1 teaspoon vanilla extract / vanilla paste
  • 3 egg yolks
  • 50 g (1/4 cup) caster sugar
  • 30 g (4 tablespoons) cornstarch
  • 12 g (1 tablespoon + 1 teaspoon) all-purpose flour
  • 30 g (2 tablespoons) unsalted butter- diced

Topping

  • 600 g (1. 3lbs) fresh strawberries
  • 3 tablespoons apricot preserve, optional

Method

Sweet Pastry

  • 1)

    This Strawberry Tart Recipe is made with a tart ring of 8-inch (20cm) diameter.

    Prepare 1 batch of the sweet pastry, For best results, prepare the dough the day before, and line in the tart pan, cover with plastic wrap and let rest overnight. Cook the tart shell the following day: blind baking and seal with egg wash.

Vanilla Pastry Cream

Topping

  • 1)

    Wash and hull the strawberries. Cut them in half and / or wedges for the biggest ones. Place on a paper towel to absorb water.

Assembly

  • 1)

    Process when the tart shell is cooked and fully cooled and the vanilla pastry cream is set.

  • 2)

    Using a spoon or a spatula, add the pastry cream to the tart shell, spread evenly and smooth the top.

  • 3)

    Arrange the strawberries on the top.

  • 4)

    If you want to add a glaze, in a small saucepan, add the apricot preserve / jam and heat on medium heat. Stir continuously until the jam is thin and glossy. Add a few teaspoons of water if it’s too thick. Don’t let it boiled, it should be slightly warm. Using a pastry brush, gently coat the strawberries with the melted jam.

    Store in the fridge until ready to serve.
