No-bake Biscoff truffles are made with crushed Biscoff cookies, cream cheese and Biscoff spread (= cookie butter), then dipped in white chocolate: a winning combo.

Cream cheese: use full fat cream cheese to give the best flavor and consistency. Drain any water you may have before incorporating it.

White chocolate for the coating. Use good quality white chocolate

How to Make these Biscoff Truffles?

-Start by making the cookie dough truffles: Crush Biscoff cookies and place them in a food processor. Pulse to a fine crumb.

-Add the softened cream cheese, Biscoff spread, and pulse until fully combined into a thick paste.

-Scoop the dough and roll into balls. Chill.

-Dip the balls in the melted chocolate to coat.

-Let the chocolate set.

Biscoff Truffles

These Decadent Biscoff Truffles are made with only 4 ingredients. Super easy to make, these truffles are the perfect treat.

Ingredients

Biscoff Truffles

  • 350 g (12.3 oz) Biscoff Cookies
  • 70 g (4 tablespoons) Biscoff cookie butter (smooth version)
  • 140 g (4.9 oz or 1/2 cup + 2 tablespoons) full fat cream cheese, softened
  • 300 g (10.5 oz) white chocolate, finely chopped

Decoration (optional)

  • 35 g (2 tablespoons) Biscoff cookie butter (smooth version)

Method

  • 1)

    In a microwave-proof bowl, place the Biscoff cookie butter and microwave for 15-20 seconds to smooth the butter. Give a quick stir. It should be smooth and pourable. Set aside.

  • 2)

    Prepare a baking parchment. Set Aside.

  • 3)

    Crush the Biscoff cookies and add them to a food processor. Pulse until they ‘re a fine crumb.

  • 4)

    Add the Biscoff cookie butter (previously melted) and cream cheese to the food processor and pulse until fully combined into a thick paste.

  • 5)

    Scoop the dough and, using your hands, roll into balls, 1-inch size. Place the balls on the baking parchment. Chill for at least 1 hour in the fridge or 20 minutes in the freezer.

  • 6)

    Melt the white chocolate, microwave or double boiler.

  • 7)

    Using a fork, dip the balls in the melted chocolate to coat. Shake gently to allow any excess of chocolate to drip back and transfer back to the baking parchment.

  • 8)

    Let the chocolate set at room temperature or in the fridge.

  • 9)

    Decoration: place 2 tablespoons of Biscoff cookie butter in a microwave-proof bowl and microwave for 15 seconds. Give a quick stir and pour it into a piping bag. Cut the tip and drizzle on the truffles. 

    Place in the fridge until it is set.

Notes

– US/UK baking spoons:  teaspoon: 5ml / tablespoon: 15ml / cup: 240ml

– If you use a small food processor, you may need to crumb the biscuits in 2 batches. Then, continue the recipe in 1 batch.

– Idea Decoration: reserve 2 tablespoons of the crumb. When you dip the truffles into the chocolate, sprinkle these remaining Biscoff crumbs before the chocolate hardens.

– Store in an airtight container in the fridge for up to two weeks.
